Olive herb - standard in Mediterranean cuisine

The olive herb, as its name suggests, tastes of fresh olives and is therefore one of the most popular herbs in Mediterranean cuisine. Although the moderately hardy herb has unfortunately not yet become very well known to us. Olive herb is generally used in the smokehouse to give meat and fish an even more delicate taste.

Grow olive herb

You should plant the olive herb, which grows up to 50 centimeters on average, in a dry and sunny location. It is therefore also ideal for cultivation in a rock garden.


Especially when the sun is shining, the green-leaved olive herb develops a very intense olive scent that spreads a pleasant aroma in the garden.

Caring for olive herb properly

»Winter protection:

The olive herb, often referred to as holy herb, is one of the easiest to care for in the garden and can confidently remain in the open even in winter if you protect it with a little brushwood or garden fleece.


Olive herb is also suitable for growing in a pot (link tip: pull herbs on the windowsill - this is how it's done), but should then be hibernated in a frost-free, light-flooded room. This has the advantage that you can use the herb almost all year round.

Furthermore, the yellow-flowering herb variety with its long-lasting flowering phase from the beginning of June to the end of August only needs moderate watering during longer dry phases - but you should definitely avoid waterlogging!


You must also regularly supply olive herb with organic fertilizer. You should incorporate this around the plant approximately every 4 to 6 weeks, whereby the soil is automatically loosened up again.

»Cut back:

A complete pruning of the plant should always take place in early spring, shortly before its new growth begins. In autumn, on the other hand, you should only do a small topiary every year so that the natural foliage can protect the plant from winter frosts.

Harvest olive herb

The olive herb looks very similar to the cypress family, which is why its leaves are often incorrectly referred to as needles. However, these are ideal for seasoning countless dishes (salads or soups, fish dishes and meat dishes).

The individual stems are harvested depending on the need for use. You can pluck the leaves for the dishes themselves. It also tastes great as a topping on bread or with cheese.
