You can make ginger syrup yourself in no time at all

In winter it helps with colds and sore throats as a tea, in summer it is a healthy refreshment when chilled and is also an important ingredient in some cocktails: Ginger not only gives a spicy note to many Asian dishes.

However, you don't always have to process the ginger fresh. You can also use it in the form of syrup in the kitchen, e.g. conjure up a delicious lemonade in no time at all. You only need a few ingredients for the syrup. You can also easily create your own mix. For all those who have never made ginger syrup themselves, here is a simple basic recipe.


For about 1.5 l of ginger syrup you need:

  • 150 g ginger (peeled)
  • 500 ml water
  • 250 - 300 g brown sugar (white sugar is also possible)
  • Juice of a lemon
  • a piece of organic lemon
  • 5 g citric acid


1Cut the peeled ginger into rough cubes and put them in a saucepan. Then add the water, bring everything to the boil and let the mixture simmer for about 5 to 10 minutes with the lid closed.

2After these 10 minutes, switch off the stove, pour in the lemon juice and put the piece of lemon in the saucepan. Allow this mixture to pass through covered overnight.

The next day you have to pour the ginger-lemon mixture through a sieve into a large saucepan. Then add the sugar, citric acid and enough water until you get 1.5 liters of liquid. Bring everything to a boil while stirring.

4You have to prepare the bottles for filling. Wash them carefully and then rinse them hot. A little tip: bottles with a capacity of 0.5 to 0.75 l are particularly suitable.

5 Once the syrup has boiled, carefully fill it with a funnel into the still hot bottles and then close them carefully. In dark and cool storage, the syrup will last up to 2 months.
