For a very quick but delicious avocado pesto recipe that goes well with spaghetti, for example, you need the following ingredients:

  • 1 ripe avocado
  • 10 dried tomatoes
  • 2 cloves of garlic
  • 40 grams of pine nuts
  • Basil leaves to taste
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Dice the avocado and finely chop the dried tomatoes, garlic and basil leaves. Then put the mixture together with the pine nuts in a blender and puree. Then just add the olive oil and season everything with salt and pepper.

You can get an even more fruity pesto with the following recipe, which requires these ingredients:

  • 1 avocado
  • 1/2 mango
  • 12 dried tomatoes
  • some pine nuts
  • Salt and pepper to taste
  • some lime juice
  • some oil (e.g. from the dried tomatoes)

Cut the avocado, mango and dried tomatoes into small pieces and add them together with the pine nuts, salt, pepper, oil and lime juice to a blender and puree. You can then serve the avocado-mango pesto immediately.
