This sweet pea soup tastes really great

They are fresh, crunchy and sweet, can be eaten with the casing and are often part of wok dishes. Sugar peas also taste good in rice dishes, stews and vegetable pans.   • a handful of sugar snap peas
  • 300 g young peas
  • 3 tbsp butter
  • 1/2 clove of garlic
  • 750 ml vegetable soup
  • 250 ml cream
  • 1 pinch of nutmeg
  • 4 tbsp white bread cubes
  • 2 peeled shallots
  • salt
  • White pepper


➥ Step 1:

First peel the shallots and the clove of garlic and cut them into small pieces. Then put the peas, shallots and garlic in a saucepan with 2 tablespoons of butter. The whole thing should sweat briefly. Then pour in the vegetable soup and slowly add the cream. Season with salt, pepper and nutmeg and simmer for a total of five minutes.

In the meantime, cut the sugar snap peas into thin strips and blanch them briefly in salt water. Also roast the white bread cubes in a pan with 1 tablespoon butter until golden brown.

Then puree the soup with a mixing stick and pass through a sieve. Foam the whole thing again with a mixing stick and place in suitable soup cups. Now put the sugar snap peas in the soup and sprinkle with the golden brown bread croutons. Good Appetite.
